HOW TO MAKE CROISSANT PUDDING:
Start by preparing the homemade pastry cream by whisking eggs, brown sugar, sugar, half and half and vanilla. This can also be done in a blender and it makes a very good custard mixture.
Cut the croissants into bite-sized pieces. Spread a 10x15 or 9x16 or 10x13 dish with boiling water. Spread the croissants on the mold. Pour the custard over the croissants and let sit for about 10 minutes, allowing the croissants to soak up the custard mixture.
Place the pot in a larger bowl, filled with 1 inch of hot water. This will allow the bread pudding to rise and not cook.
Cover the pan with foil, hold the foil tightly, so that air escapes. Bake for 45 minutes in aluminum foil. After 45 minutes, remove the foil and leave the bread pudding covered for another 30-40 minutes. Watch for the bread pudding to puff and the custard to set.
Make homemade vanilla sauce by melting butter, brown sugar, sugar and heavy cream until melted. Add the vanilla.
Serve the croissant bread pudding with vanilla sauce. Croissants with Vanilla sauce are made with croissants baked with custard and topped with homemade vanilla sauce. The ultimate decadent dessert or breakfast!
